Description

A refreshing and nutritious quinoa salad with cherry tomatoes, perfect for a light lunch or as a side dish.


Ingredients

For the Crust:

  • 1 cup quinoa
  • 2 cups water
  • 1 pint cherry tomatoes, halved
  • 1/4 cup chopped fresh basil
  • 2 tablespoons olive oil
  • 1 tablespoon lemon juice
  • Salt and pepper to taste

Instructions

1. Prepare the Crust:

  1. Rinse quinoa under cold water.
  2. In a medium saucepan, combine quinoa and water, and bring to a boil over medium-high heat.
  3. Reduce heat to low, cover, and simmer for 15 minutes until water is absorbed.
  4. Remove from heat and let quinoa sit, covered, for 5 minutes, then fluff with a fork.
  5. In a large bowl, combine cooked quinoa, cherry tomatoes, and basil.
  6. Drizzle with olive oil and lemon juice, then toss to combine.
  7. Season with salt and pepper to taste, and serve chilled or at room temperature.

Notes

You can customize the seasonings to taste.
