For the Crust:
- 1 cup quinoa
- 2 cups water
- 1 pint cherry tomatoes, halved
- 1/4 cup chopped fresh basil
- 2 tablespoons olive oil
- 1 tablespoon lemon juice
- Salt and pepper to taste
Instructions
1. Prepare the Crust:
- Rinse quinoa under cold water.
- In a medium saucepan, combine quinoa and water, and bring to a boil over medium-high heat.
- Reduce heat to low, cover, and simmer for 15 minutes until water is absorbed.
- Remove from heat and let quinoa sit, covered, for 5 minutes, then fluff with a fork.
- In a large bowl, combine cooked quinoa, cherry tomatoes, and basil.
- Drizzle with olive oil and lemon juice, then toss to combine.
- Season with salt and pepper to taste, and serve chilled or at room temperature.
