- 1 cup unsalted butter, softened
- 1/2 cup granulated sugar
- 2 1/4 cups all-purpose flour
- 1/2 teaspoon salt
- 1/2 cup raspberry jam
Instructions
- In a large bowl, cream together the butter and sugar until light and fluffy.
- Gradually add the flour and salt, mixing until a dough forms.
- Roll out the dough on a floured surface and spread the raspberry jam over it.
- Roll up the dough into a log and chill for 1 hour.
- Preheat oven to 350°F (175°C). Slice the log into cookies and place on a baking sheet.
- Bake for 10-12 minutes or until edges are golden.
Notes
For best results, use high-quality raspberry jam. Cookies can be stored in an airtight container for up to a week.
