Description

These red velvet cookie bars are soft, chewy, and feature a classic red velvet flavor with cocoa and cream cheese frosting.


Ingredients

  • 2 1/4 cups all-purpose flour
  • 2 tablespoons unsweetened cocoa powder
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 cup unsalted butter, softened
  • 1 1/2 cups granulated sugar
  • 2 large eggs
  • 2 teaspoons vanilla extract
  • 1 tablespoon red food coloring
  • 1 cup white chocolate chips (optional)
  • For frosting: 8 oz cream cheese, softened
  • 1/4 cup butter, softened
  • 2 cups powdered sugar
  • 1 teaspoon vanilla extract

Instructions

  1. Preheat your oven to 350°F (175°C) and grease a 9×13 inch baking pan.
  2. In a medium bowl, whisk together the flour, cocoa powder, baking soda, and salt.
  3. In a large bowl, cream together the softened butter and granulated sugar until light and fluffy.
  4. Beat in the eggs one at a time, then stir in the vanilla extract and red food coloring.
  5. Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
  6. Fold in the white chocolate chips if using.
  7. Spread the batter evenly into the prepared baking pan.
  8. Bake for 20-25 minutes, or until a toothpick inserted in the center comes out clean.
  9. Allow the bars to cool completely in the pan on a wire rack.
  10. For the frosting: Beat together cream cheese, butter, powdered sugar, and vanilla extract until smooth.
  11. Spread the frosting over the cooled bars and cut into squares.

Notes

These bars can be stored in an airtight container at room temperature for up to 3 days or refrigerated for up to a week. Add more food coloring for a deeper red hue if desired.
