Description

Soft red velvet cookies with a creamy cheese filling, perfect for holidays.


Ingredients

  • 1 cup unsalted butter, softened
  • 1/2 cup granulated sugar
  • 1/2 cup brown sugar
  • 2 large eggs
  • 2 teaspoons vanilla extract
  • 2 tablespoons red food coloring
  • 2 1/2 cups all-purpose flour
  • 1/4 cup unsweetened cocoa powder
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • 8 ounces cream cheese, softened
  • 1/4 cup powdered sugar
  • 1 teaspoon vanilla extract for filling

Instructions

  1. Preheat oven to 350°F (175°C) and line baking sheets with parchment paper.
  2. In a large bowl, cream together butter, granulated sugar, and brown sugar until light and fluffy.
  3. Beat in eggs one at a time, then stir in vanilla extract and red food coloring.
  4. In another bowl, whisk together flour, cocoa powder, baking powder, and salt.
  5. Gradually add dry ingredients to wet ingredients, mixing until just combined.
  6. In a separate bowl, mix cream cheese, powdered sugar, and vanilla extract until smooth.
  7. Scoop dough into balls, make an indent in each with your thumb, and fill with cream cheese mixture.
  8. Bake for 10-12 minutes or until edges are set. Let cool on sheets for 5 minutes before transferring to wire rack.
