Instructions
- Preheat oven to 350°F (175°C) and line baking sheets with parchment paper.
- In a medium bowl, whisk together flour, cocoa powder, baking soda, and salt.
- In a large bowl, cream butter and sugar until light and fluffy. Add eggs one at a time, beating well after each addition.
- Mix in red food coloring and vanilla extract.
- Alternately add dry ingredients and buttermilk to the butter mixture, beginning and ending with dry ingredients.
- Scoop dough onto prepared sheets and shape into rose forms using a cookie cutter.
- Bake for 10-12 minutes or until set. Cool on wire racks.
- For filling: Beat cream cheese, powdered sugar, and vanilla until smooth. Spread on cooled cookies and sandwich together.
Notes
Ensure cookies are completely cooled before adding filling to prevent melting. Store in an airtight container for up to 3 days.
