For the Crust:
- 1 cup graham cracker crumbs
- 3 tablespoons melted butter
- 1/4 cup sugar
- 1 cup heavy cream
- 8 oz cream cheese, softened
- 1/2 cup lime juice
- 2 teaspoons lime zest
- 1/2 cup powdered sugar
Instructions
1. Prepare the Crust:
- Preheat oven to 350ยฐF (175ยฐC).
- Combine graham cracker crumbs, melted butter, and sugar in a bowl. Press mixture into the bottom of a 9-inch springform pan.
- Bake crust for 10 minutes, then allow to cool.
- In a large bowl, beat cream cheese until smooth, then add lime juice and lime zest.
- In a separate bowl, whip heavy cream until stiff peaks form, then fold into the cream cheese mixture.
- Pour mixture over the cooled crust and refrigerate for at least 4 hours before serving.
