Description

A deliciously healthy roasted dish combining the crunch of chickpeas and the tenderness of zucchini.

For the Crust:

  • 1 can of chickpeas, drained and rinsed
  • 2 medium zucchinis, sliced
  • 2 tablespoons olive oil
  • 1 teaspoon salt
  • 1 teaspoon pepper
  • 1 teaspoon garlic powder
  • 1 teaspoon smoked paprika

Instructions

1. Prepare the Crust:

  1. Preheat the oven to 400°F (200°C).
  2. In a large bowl, combine chickpeas and zucchini slices.
  3. Drizzle with olive oil and season with salt, pepper, garlic powder, and smoked paprika. Toss to coat evenly.
  4. Spread the mixture in a single layer on a baking sheet.
  5. Roast in the oven for 30 minutes, turning halfway through, until chickpeas are crispy and zucchini is tender.
  6. Serve warm as a side or main dish.
