For the Crust:
- 1 can of chickpeas, drained and rinsed
- 2 medium zucchinis, sliced
- 2 tablespoons olive oil
- 1 teaspoon salt
- 1 teaspoon pepper
- 1 teaspoon garlic powder
- 1 teaspoon smoked paprika
Instructions
1. Prepare the Crust:
- Preheat the oven to 400°F (200°C).
- In a large bowl, combine chickpeas and zucchini slices.
- Drizzle with olive oil and season with salt, pepper, garlic powder, and smoked paprika. Toss to coat evenly.
- Spread the mixture in a single layer on a baking sheet.
- Roast in the oven for 30 minutes, turning halfway through, until chickpeas are crispy and zucchini is tender.
- Serve warm as a side or main dish.
