For the Crust:

  • 2 large sweet potatoes
  • 1 can of black beans, drained and rinsed
  • 1 tablespoon olive oil
  • 1 teaspoon ground cumin
  • 1/2 teaspoon chili powder
  • Salt and pepper to taste
  • Fresh cilantro for garnish

Instructions

1. Prepare the Crust:

  1. Preheat oven to 400ยฐF (200ยฐC). Peel and cube the sweet potatoes.
  2. Toss the sweet potatoes with olive oil, cumin, chili powder, salt, and pepper. Spread on a baking sheet.
  3. Roast in the oven for 25-30 minutes until tender. Heat the black beans, then serve together garnished with cilantro.

Notes

You can customize the seasonings to taste.
