For the Crust:
- 2 large sweet potatoes
- 1 can of black beans, drained and rinsed
- 1 tablespoon olive oil
- 1 teaspoon ground cumin
- 1/2 teaspoon chili powder
- Salt and pepper to taste
- Fresh cilantro for garnish
Instructions
1. Prepare the Crust:
- Preheat oven to 400ยฐF (200ยฐC). Peel and cube the sweet potatoes.
- Toss the sweet potatoes with olive oil, cumin, chili powder, salt, and pepper. Spread on a baking sheet.
- Roast in the oven for 25-30 minutes until tender. Heat the black beans, then serve together garnished with cilantro.
