Description

Ingredients

  • 4 medium beets, trimmed and scrubbed
  • 2 tablespoons olive oil
  • Salt and pepper to taste
  • 8 ounces goat cheese, softened
  • 1/4 cup chopped fresh herbs (such as parsley or chives)
  • 1 log of goat cheese (about 10 oz)
  • Optional: Balsamic glaze for drizzling

Instructions

  1. Preheat the oven to 400ยฐF (200ยฐC).
  2. Toss the beets with olive oil, salt, and pepper, then wrap in foil and roast for 45-60 minutes until tender.
  3. Let the beets cool, then peel and slice them.
  4. In a bowl, mix the softened goat cheese with chopped herbs.
  5. Spread the goat cheese mixture on a serving platter and arrange the sliced beets on top.
  6. Drizzle with balsamic glaze if desired, and serve.
