Ingredients

- 4 medium beets, trimmed and scrubbed
- 2 tablespoons olive oil
- Salt and pepper to taste
- 8 ounces goat cheese, softened
- 1/4 cup chopped fresh herbs (such as parsley or chives)
- 1 log of goat cheese (about 10 oz)
- Optional: Balsamic glaze for drizzling
Instructions
- Preheat the oven to 400ยฐF (200ยฐC).
- Toss the beets with olive oil, salt, and pepper, then wrap in foil and roast for 45-60 minutes until tender.
- Let the beets cool, then peel and slice them.
- In a bowl, mix the softened goat cheese with chopped herbs.
- Spread the goat cheese mixture on a serving platter and arrange the sliced beets on top.
- Drizzle with balsamic glaze if desired, and serve.
