For the Crust:
- 2 medium beets, peeled and diced
- 2 medium sweet potatoes, peeled and diced
- 2 tablespoons olive oil
- Salt and pepper to taste
- 1/4 cup crumbled feta cheese
- 1/4 cup fresh cilantro, chopped
Instructions
1. Prepare the Crust:
- Preheat the oven to 400ยฐF (200ยฐC).
- Toss the diced beets and sweet potatoes with olive oil, salt, and pepper. Spread them evenly on a baking sheet.
- Roast in the oven for 25-30 minutes or until tender and lightly browned. After removing, sprinkle with feta and cilantro before serving.
