Sweet, tender roasted carrots served with a creamy, tangy, and herbaceous whipped feta dip. A simple yet elegant side dish or appetizer.

For the Crust:
- 1 lb carrots, peeled
- 2 tbsp olive oil
- 1 tsp honey
- 1/2 tsp smoked paprika
- Salt and black pepper to taste
- 8 oz block feta cheese
- 4 oz cream cheese, softened
- 2 tbsp fresh lemon juice
- 1 clove garlic, minced
- 2 tbsp fresh dill, chopped
- 2 tbsp milk or cream
Instructions
1. Prepare the Crust:
- Preheat oven to 400ยฐF (200ยฐC). Toss the peeled carrots with olive oil, honey, smoked paprika, salt, and pepper on a baking sheet. Arrange in a single layer.
- Roast the carrots for 25-30 minutes, or until tender and caramelized around the edges, turning halfway through.
- While carrots roast, make the dip. In a food processor, combine the feta, cream cheese, lemon juice, garlic, and dill. Blend until smooth.
- With the processor running, slowly stream in the milk until the dip reaches a light, creamy, and spreadable consistency. Season with a pinch of black pepper.
- Transfer the whipped feta to a serving bowl. Serve the warm roasted carrots alongside the dip for dipping or drizzling.
