Description

Sweet, tender roasted carrots served with a creamy, tangy, and herbaceous whipped feta dip. A simple yet elegant side dish or appetizer.

For the Crust:

  • 1 lb carrots, peeled and halved lengthwise
  • 2 tbsp olive oil
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 8 oz block feta cheese, crumbled
  • 4 oz cream cheese, softened
  • 1/4 cup Greek yogurt
  • 2 tbsp lemon juice
  • 1 clove garlic, minced
  • 2 tbsp fresh dill, chopped

Instructions

1. Prepare the Crust:

  1. Preheat oven to 400ยฐF (200ยฐC). Toss carrots with olive oil, salt, and pepper on a baking sheet. Roast for 25-30 minutes, or until tender and caramelized.
  2. While carrots roast, combine crumbled feta, cream cheese, Greek yogurt, lemon juice, and garlic in a food processor. Blend until smooth and creamy.
  3. Transfer the whipped feta to a serving bowl and fold in the chopped dill. Serve immediately alongside the warm roasted carrots.

Notes

You can customize the seasonings to taste.
