For the Crust:
- 1 lb carrots, peeled and halved lengthwise
- 2 tbsp olive oil
- 1/2 tsp salt
- 1/4 tsp black pepper
- 8 oz block feta cheese, crumbled
- 4 oz cream cheese, softened
- 1/4 cup Greek yogurt
- 2 tbsp lemon juice
- 1 clove garlic, minced
- 2 tbsp fresh dill, chopped
Instructions
1. Prepare the Crust:
- Preheat oven to 400ยฐF (200ยฐC). Toss carrots with olive oil, salt, and pepper on a baking sheet. Roast for 25-30 minutes, or until tender and caramelized.
- While carrots roast, combine crumbled feta, cream cheese, Greek yogurt, lemon juice, and garlic in a food processor. Blend until smooth and creamy.
- Transfer the whipped feta to a serving bowl and fold in the chopped dill. Serve immediately alongside the warm roasted carrots.
