Description

A simple yet flavorful side dish featuring roasted carrots, creamy whipped ricotta, and a spicy honey glaze.


Ingredients

  • 2 pounds carrots, peeled and trimmed
  • 2 tablespoons olive oil
  • Kosher salt and freshly ground black pepper, to taste
  • 1 cup whole-milk ricotta cheese
  • 1 tablespoon honey
  • 1/4 teaspoon red pepper flakes
  • Fresh herbs, for garnish (optional)

Instructions

  1. Preheat the oven to 425ยฐF (220ยฐC).
  2. Toss the carrots with olive oil, salt, and pepper on a baking sheet.
  3. Roast in the oven for 20-25 minutes, or until carrots are tender and caramelized.
  4. In a bowl, whip the ricotta cheese until smooth and creamy.
  5. In a small saucepan, warm the honey and red pepper flakes over low heat for 1-2 minutes.
  6. To serve, spread the whipped ricotta on a platter, top with roasted carrots, and drizzle with the hot honey mixture. Garnish with fresh herbs if desired.

Notes

Adjust the amount of red pepper flakes for desired spice level. Best served fresh.
