Description

Ingredients

  • 2 large sweet potatoes, sliced into 1/4-inch rounds
  • 2 tablespoons olive oil
  • 2 tablespoons honey
  • Salt and pepper to taste
  • 1/2 cup crumbled feta cheese

Instructions

  1. Preheat oven to 400 degrees F (200 degrees C).
  2. In a large bowl, toss the sweet potato rounds with olive oil, honey, salt, and pepper until evenly coated.
  3. Arrange the rounds in a single layer on a baking sheet.
  4. Roast in the preheated oven for 20-25 minutes, or until the potatoes are tender and golden brown.

Notes
