- 2 large sweet potatoes, peeled and cut into cubes
- 2 tablespoons olive oil
- 1 teaspoon ground cinnamon
- 2 tablespoons honey
- Salt to taste
- Optional: Chopped nuts for garnish
Instructions
- Preheat the oven to 400ยฐF (200ยฐC).
- In a large bowl, toss the sweet potato cubes with olive oil, cinnamon, honey, and salt.
- Spread the sweet potatoes evenly on a baking sheet.
- Roast in the preheated oven for 25-30 minutes, or until tender and caramelized, stirring halfway through.
- Remove from oven and let cool slightly before serving.
Notes
For a spicier version, add a pinch of cayenne pepper. Serve warm as a side dish.
