- 2 pounds cherry tomatoes
- 8 ounces feta cheese
- 2 large shallots, thinly sliced
- 1/4 cup olive oil
- 2 garlic cloves, minced
- 1 teaspoon dried oregano
- Salt and pepper to taste
- Fresh basil leaves for garnish
Instructions
- Preheat the oven to 400°F (200°C). Toss cherry tomatoes with olive oil, salt, and pepper, then roast for 20-25 minutes until blistered.
- In a food processor, blend feta cheese with a splash of olive oil until smooth and whipped.
- In a small skillet, heat olive oil over medium heat and add sliced shallots. Cook until golden and sizzling, about 5 minutes.
- Spread the whipped feta on a serving plate, top with roasted tomatoes, and drizzle with the sizzling shallot oil.
- Garnish with fresh basil leaves and serve immediately with bread or crackers.
Notes
For a spicier version, add red pepper flakes to the shallot oil. Store leftovers in an airtight container for up to 2 days.
