Description

A flavorful dip featuring roasted tomatoes blended with whipped feta, topped with sizzling shallot oil for a burst of flavor.


Ingredients

  • 2 pounds cherry tomatoes
  • 8 ounces feta cheese
  • 2 large shallots, thinly sliced
  • 1/4 cup olive oil
  • 2 garlic cloves, minced
  • 1 teaspoon dried oregano
  • Salt and pepper to taste
  • Fresh basil leaves for garnish

Instructions

  1. Preheat the oven to 400°F (200°C). Toss cherry tomatoes with olive oil, salt, and pepper, then roast for 20-25 minutes until blistered.
  2. In a food processor, blend feta cheese with a splash of olive oil until smooth and whipped.
  3. In a small skillet, heat olive oil over medium heat and add sliced shallots. Cook until golden and sizzling, about 5 minutes.
  4. Spread the whipped feta on a serving plate, top with roasted tomatoes, and drizzle with the sizzling shallot oil.
  5. Garnish with fresh basil leaves and serve immediately with bread or crackers.

Notes

For a spicier version, add red pepper flakes to the shallot oil. Store leftovers in an airtight container for up to 2 days.
