Description

A hearty and flavorful soup made with white beans, bacon, vegetables, and herbs, perfect for a cozy meal.


Ingredients

  • 1 pound dried white beans, soaked overnight
  • 6 slices bacon, chopped
  • 1 large onion, diced
  • 2 carrots, sliced
  • 2 celery stalks, chopped
  • 4 garlic cloves, minced
  • 6 cups chicken broth
  • 1 teaspoon dried thyme
  • Salt and pepper to taste
  • 2 bay leaves

Instructions

  1. In a large pot, cook the chopped bacon over medium heat until crispy; remove and set aside, leaving the fat in the pot.
  2. Add the onion, carrots, celery, and garlic to the pot; sauté until softened, about 5 minutes.
  3. Drain and rinse the soaked beans, then add them to the pot along with the chicken broth, thyme, bay leaves, salt, and pepper.
  4. Bring to a boil, then reduce heat and simmer for 1-2 hours, or until beans are tender.
  5. Stir in the cooked bacon and adjust seasoning as needed; remove bay leaves before serving.

Notes

For a vegetarian version, substitute bacon with smoked paprika or omit it entirely. Store leftovers in the refrigerator for up to 3 days.
