- 1 pound dried white beans, soaked overnight
- 6 slices bacon, chopped
- 1 large onion, diced
- 2 carrots, sliced
- 2 celery stalks, chopped
- 4 garlic cloves, minced
- 6 cups chicken broth
- 1 teaspoon dried thyme
- Salt and pepper to taste
- 2 bay leaves
Instructions
- In a large pot, cook the chopped bacon over medium heat until crispy; remove and set aside, leaving the fat in the pot.
- Add the onion, carrots, celery, and garlic to the pot; sauté until softened, about 5 minutes.
- Drain and rinse the soaked beans, then add them to the pot along with the chicken broth, thyme, bay leaves, salt, and pepper.
- Bring to a boil, then reduce heat and simmer for 1-2 hours, or until beans are tender.
- Stir in the cooked bacon and adjust seasoning as needed; remove bay leaves before serving.
Notes
For a vegetarian version, substitute bacon with smoked paprika or omit it entirely. Store leftovers in the refrigerator for up to 3 days.
