- Crust:
- 1 1/2 cups graham cracker crumbs
- 1/4 cup unsalted butter, melted
- 2 tablespoons granulated sugar
- Cheesecake Filling:
- 16 ounces cream cheese, softened
- 1/2 cup granulated sugar
- 2 large eggs
- 1 teaspoon vanilla extract
- 1/2 cup sour cream
- Apple Pie Topping:
- 2 medium apples, peeled and diced
- 1/4 cup brown sugar
- 1 teaspoon ground cinnamon
- 1/4 teaspoon nutmeg
- Salted Caramel Sauce:
- 1/2 cup granulated sugar
- 2 tablespoons water
- 1/4 cup heavy cream
- 2 tablespoons unsalted butter
- 1/2 teaspoon sea salt
Instructions
- Preheat oven to 325ยฐF (163ยฐC) and line a muffin tin with paper liners.
- In a bowl, mix graham cracker crumbs, melted butter, and sugar. Press into the bottom of each liner.
- Bake the crust for 5 minutes, then let cool.
- In a large bowl, beat cream cheese and sugar until smooth. Add eggs one at a time, then vanilla and sour cream.
- Pour the cheesecake mixture over the cooled crusts, filling each about 3/4 full.
- Bake for 20-25 minutes or until set. Let cool completely.
- For the apple topping, cook diced apples, brown sugar, cinnamon, and nutmeg in a saucepan over medium heat for 5-7 minutes until softened.
- Spoon the apple mixture over the cooled cheesecakes.
- For the salted caramel, heat sugar and water in a saucepan over medium heat until amber. Remove from heat and stir in cream, butter, and salt.
- Drizzle the salted caramel over the apple topping. Chill for at least 2 hours before serving.
Notes
For best results, use fresh apples and high-quality caramel sauce.
