A creamy cheesecake inspired by Samoa cookies, featuring a chocolate crust, caramel, and coconut topping.

- Crust:
- 1 1/2 cups graham cracker crumbs
- 1/4 cup unsweetened cocoa powder
- 1/4 cup sugar
- 6 tablespoons unsalted butter, melted
- Filling:
- 24 oz cream cheese, softened
- 1 cup sugar
- 3 large eggs
- 1 teaspoon vanilla extract
- 1/2 cup sour cream
- Topping:
- 1 cup caramel sauce
- 1 cup shredded coconut, toasted
- 1/2 cup chocolate sauce
Instructions
- Preheat oven to 325ยฐF and grease a 9-inch springform pan.
- In a bowl, mix graham cracker crumbs, cocoa powder, sugar, and melted butter. Press into the bottom of the pan.
- Bake the crust for 10 minutes, then let it cool.
- In a large bowl, beat cream cheese and sugar until smooth. Add eggs one at a time, then mix in vanilla and sour cream.
- Pour the filling over the cooled crust and bake for 55-60 minutes, or until set.
- Let the cheesecake cool completely, then refrigerate for at least 4 hours.
- Before serving, drizzle with caramel sauce, sprinkle toasted coconut, and drizzle with chocolate sauce.
