Ingredients

  • 4 boneless, skinless chicken breasts
  • 1/2 cup fresh lime juice
  • 1/4 cup olive oil
  • 4 garlic cloves, minced
  • 1 tablespoon chili powder
  • 1 teaspoon ground cumin
  • 1 teaspoon smoked paprika
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/4 cup chopped fresh cilantro
  • 2 tablespoons honey

Instructions

  1. In a bowl, whisk together lime juice, olive oil, garlic, chili powder, cumin, smoked paprika, salt, black pepper, cilantro, and honey to make the marinade.
  2. Place chicken breasts in a resealable plastic bag and pour the marinade over them. Seal the bag and refrigerate for at least 1 hour, or up to 4 hours for more flavor.
  3. Preheat the grill to medium-high heat.
  4. Remove chicken from the marinade and discard the excess marinade.
  5. Grill the chicken for 6-7 minutes per side, or until the internal temperature reaches 165°F (75°C).
  6. Let the chicken rest for 5 minutes before slicing and serving.

Notes

For a spicier version, add diced jalapeños to the marinade. Ensure chicken is fully marinated for best results.
