Description

Tender chicken breasts are pan-seared and smothered in a rich, creamy sauce with sautéed mushrooms and nutty Asiago cheese.

For the Crust:

  • 4 boneless, skinless chicken breasts
  • 1 tsp paprika
  • Salt and black pepper to taste
  • 2 tbsp olive oil
  • 8 oz cremini mushrooms, sliced
  • 3 cloves garlic, minced
  • 1 cup chicken broth
  • 1 cup heavy cream
  • 1 cup freshly grated Asiago cheese
  • 1 tsp fresh thyme leaves

Instructions

1. Prepare the Crust:

  1. Season chicken breasts with paprika, salt, and pepper. Heat olive oil in a large skillet over medium-high heat. Cook chicken for 5-7 minutes per side, until golden and cooked through. Remove and set aside.
  2. In the same skillet, add the mushrooms and cook until softened and browned, about 5 minutes. Add the garlic and cook for another minute until fragrant.
  3. Pour in the chicken broth to deglaze the pan, scraping up any browned bits. Stir in the heavy cream and bring to a simmer. Reduce heat to low and whisk in the Asiago cheese until melted and smooth. Stir in the thyme. Return the chicken to the skillet and spoon the sauce over it. Simmer for 2-3 minutes to heat through before serving.
