Ingredients

  • 8 oz spaghetti
  • 1 lb sea scallops
  • 2 tablespoons capers
  • 4 tablespoons unsalted butter
  • 2 cloves garlic, minced
  • 1/2 cup white wine
  • Salt and pepper to taste
  • Fresh parsley for garnish

Instructions

  1. Boil a large pot of salted water and cook the spaghetti according to package instructions until al dente.
  2. Pat the scallops dry and season with salt and pepper.
  3. In a large skillet, melt 2 tablespoons of butter over medium-high heat. Add the scallops and sear for 2-3 minutes per side until golden. Remove and set aside.
  4. In the same skillet, add the remaining butter, garlic, and capers. Cook for 1-2 minutes until fragrant.
  5. Pour in the white wine and simmer for 2-3 minutes to reduce.
  6. Return the scallops to the skillet and toss to coat in the sauce.
  7. Drain the pasta and add it to the skillet, tossing everything together.
  8. Serve garnished with fresh parsley.
