- 4 snapper fillets (6 oz each)
- 1/2 cup lobster meat, chopped
- 1 cup heavy cream
- 2 tablespoons butter
- 2 garlic cloves, minced
- 1/4 cup white wine
- Salt and pepper to taste
- Fresh parsley for garnish
Instructions
- Pat the snapper fillets dry and season with salt and pepper.
- Heat butter in a skillet over medium-high heat and sear the fillets for 3-4 minutes per side until golden and cooked through.
- Remove fillets and set aside; in the same skillet, add garlic and cook for 1 minute.
- Add white wine and reduce by half, then stir in chopped lobster meat and heavy cream.
- Simmer the sauce for 5 minutes until thickened, then season to taste.
- Pour the sauce over the seared snapper and garnish with fresh parsley before serving.
Notes
For a lighter version, substitute heavy cream with half-and-half. Ensure fish is fresh for best results.
