- 1 pound large shrimp, peeled and deveined
- 2 ripe avocados, diced
- 1 mango, peeled and diced
- 1 red bell pepper, diced
- 1/4 cup red onion, finely chopped
- 2 tablespoons fresh cilantro, chopped
- 2 tablespoons lime juice
- 1 tablespoon chili sauce
- Salt and pepper to taste
- 2 tablespoons olive oil for cooking
- Optional: 1 jalapeno, seeded and minced
Instructions
- In a bowl, combine diced mango, red bell pepper, red onion, cilantro, jalapeno (if using), and 1 tablespoon lime juice to make the salsa. Season with salt and set aside.
- In a separate bowl, toss the shrimp with the remaining lime juice, chili sauce, salt, and pepper.
- Heat olive oil in a skillet over medium heat. Add the shrimp and cook for 2-3 minutes per side until pink and opaque.
- Assemble the bowls by layering diced avocado at the bottom, then add the cooked shrimp, and top with the mango salsa.
- Serve immediately for the best flavor and texture.
Notes
For a spicier version, add more chili sauce or jalapeno. This recipe pairs well with quinoa or rice.
