A delicious and healthy shrimp burrito bowl that’s easy to make and packed with flavor.


Ingredients

For the Crust:

  • 1 lb shrimp, peeled and deveined
  • 1 cup cooked rice
  • 1 can black beans, drained and rinsed
  • 1 avocado, diced
  • 1 red bell pepper, diced
  • 1/4 cup chopped cilantro
  • Juice of 1 lime
  • 1 tsp chili powder
  • 1 tsp cumin
  • Salt and pepper to taste

Instructions

1. Prepare the Crust:

  1. In a bowl, toss shrimp with chili powder, cumin, salt, and pepper.
  2. Cook shrimp in a skillet over medium heat until pink and cooked through, about 5 minutes.
  3. Assemble the bowls: Divide rice, black beans, cooked shrimp, bell pepper, and avocado among four bowls. Squeeze lime juice over each bowl and garnish with cilantro.

Notes

You can customize the seasonings to taste.
