For the Crust:
- 1 lb shrimp, peeled and deveined
- 1 cup cooked rice
- 1 can black beans, drained and rinsed
- 1 avocado, diced
- 1 red bell pepper, diced
- 1/4 cup chopped cilantro
- Juice of 1 lime
- 1 tsp chili powder
- 1 tsp cumin
- Salt and pepper to taste
Instructions
1. Prepare the Crust:
- In a bowl, toss shrimp with chili powder, cumin, salt, and pepper.
- Cook shrimp in a skillet over medium heat until pink and cooked through, about 5 minutes.
- Assemble the bowls: Divide rice, black beans, cooked shrimp, bell pepper, and avocado among four bowls. Squeeze lime juice over each bowl and garnish with cilantro.
