For the Crust:
- 1 lb shrimp, peeled and deveined
- 1/2 lb crab meat, shredded
- 1 bell pepper, sliced
- 1 onion, sliced
- 2 cloves garlic, minced
- 1 tsp cumin
- 1 tsp paprika
- 1/2 tsp chili powder
- 4 large flour tortillas
- 1 cup shredded cheese
- 2 tbsp olive oil
- Salt and pepper to taste
Instructions
1. Prepare the Crust:
- Heat olive oil in a skillet over medium heat. Add garlic, bell pepper, and onion. Sautรฉ until softened.
- Add shrimp, crab meat, cumin, paprika, chili powder, salt, and pepper. Cook until shrimp is pink and cooked through.
- Lay out tortillas and divide the shrimp-crab mixture evenly among them. Sprinkle cheese on top.
- Roll up the tortillas tightly, tucking in the ends to seal.
- Heat a clean skillet over medium heat and lightly toast the roll-ups until golden and crispy on all sides.
- Slice into bite-sized pieces and serve warm.
