For the Crust:
- 4 lamb shanks
- 2 tablespoons olive oil
- 1 onion, chopped
- 3 cloves garlic, minced
- 1 cup beef stock
- 1 cup red wine
- 2 sprigs fresh rosemary
- 2 sprigs fresh thyme
- Salt and pepper to taste
Instructions
1. Prepare the Crust:
- Heat olive oil in a large skillet over medium-high heat. Add lamb shanks and sear on all sides until browned.
- Transfer lamb shanks to a slow cooker. In the same skillet, add onion and garlic, cooking until softened, then add to the slow cooker with stock, wine, rosemary, and thyme.
- Cover and cook on low for 6-8 hours or until the meat is tender. Season with salt and pepper before serving.
