Description

This slow cooker cowboy potato casserole is a hearty and easy meal perfect for busy days, featuring layers of potatoes, ground beef, and cheese.


Ingredients

  • 2 pounds potatoes, sliced
  • 1 pound ground beef
  • 1 onion, chopped
  • 1 cup shredded cheddar cheese
  • 1 teaspoon garlic powder
  • Salt and pepper to taste
  • 1 can (10.5 oz) cream of mushroom soup

Instructions

  1. Brown the ground beef and onion in a skillet over medium heat.
  2. In the slow cooker, layer the sliced potatoes at the bottom.
  3. Add the browned beef and onion mixture on top of the potatoes.
  4. Pour the cream of mushroom soup over the layers and sprinkle with garlic powder, salt, and pepper.
  5. Top with shredded cheddar cheese.
  6. Cover and cook on low for 6-8 hours, or until potatoes are tender.

Notes

For a spicier version, add diced jalapeños or hot sauce to the beef mixture.
