For the Crust:

  • 1 (3-4 pound) boneless pork loin roast
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 (20 ounce) can pineapple chunks in juice, undrained
  • 1/3 cup low-sodium soy sauce
  • 1/4 cup brown sugar
  • 3 cloves garlic, minced
  • 1 tablespoon grated fresh ginger
  • 2 tablespoons cornstarch
  • 2 tablespoons cold water
  • Sliced green onions for garnish

Instructions

1. Prepare the Crust:

  1. Season the pork loin all over with salt and pepper. Place it in the slow cooker.
  2. In a medium bowl, whisk together the pineapple with its juice, soy sauce, brown sugar, garlic, and ginger. Pour the mixture over the pork loin.
  3. Cover and cook on LOW for 6-7 hours or on HIGH for 3-4 hours, until the pork is tender and cooked through.
  4. Carefully remove the pork from the slow cooker and place it on a serving platter. Cover loosely with foil to keep warm.
  5. Pour the cooking liquid from the slow cooker into a small saucepan. Bring to a simmer over medium heat. In a small bowl, whisk the cornstarch and cold water together to create a slurry. Whisk the slurry into the simmering liquid and cook for 1-2 minutes, until the sauce has thickened.
  6. Slice the pork and spoon the thickened pineapple sauce over the top. Garnish with sliced green onions before serving.
