Ingredients

  • 1 pound smoked sausage, sliced into 1/2-inch pieces
  • 4 medium potatoes, diced into 1-inch cubes
  • 2 cups fresh green beans, trimmed and cut into 2-inch pieces
  • 1 onion, chopped
  • 3 garlic cloves, minced
  • 4 cups chicken broth
  • 1 teaspoon smoked paprika
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 2 tablespoons olive oil

Instructions

  1. Heat olive oil in a large pot over medium heat.
  2. Add sliced sausage and cook until browned, about 5 minutes.
  3. Add chopped onion and minced garlic, sauté for 2-3 minutes until softened.
  4. Stir in diced potatoes, green beans, smoked paprika, salt, and black pepper.
  5. Pour in chicken broth and bring to a boil.
  6. Reduce heat to low, cover, and simmer for 20-25 minutes until potatoes are tender.
  7. Adjust seasoning if needed and serve hot.

Notes

This stew can be made ahead and reheated; it tastes even better the next day. For a spicier version, add red pepper flakes.
