- 1 pound smoked sausage, sliced into 1/2-inch pieces
- 4 medium potatoes, diced into 1-inch cubes
- 2 cups fresh green beans, trimmed and cut into 2-inch pieces
- 1 onion, chopped
- 3 garlic cloves, minced
- 4 cups chicken broth
- 1 teaspoon smoked paprika
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 2 tablespoons olive oil
Instructions
- Heat olive oil in a large pot over medium heat.
- Add sliced sausage and cook until browned, about 5 minutes.
- Add chopped onion and minced garlic, sauté for 2-3 minutes until softened.
- Stir in diced potatoes, green beans, smoked paprika, salt, and black pepper.
- Pour in chicken broth and bring to a boil.
- Reduce heat to low, cover, and simmer for 20-25 minutes until potatoes are tender.
- Adjust seasoning if needed and serve hot.
