Ingredients

- 2 cups long-grain rice
- 4 boneless chicken thighs
- 1 large onion, sliced
- 2 cloves garlic, minced
- 1 cup chicken broth
- 1/2 cup all-purpose flour
- 2 tablespoons olive oil
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1 teaspoon paprika
Instructions
- Cook rice according to package instructions and set aside.
- Season chicken thighs with salt, pepper, and paprika.
- In a large skillet, heat olive oil over medium heat and brown the chicken on both sides, about 5 minutes per side.
- Remove chicken from skillet and set aside.
- In the same skillet, add onion and garlic, sauté until softened.
- Sprinkle flour over the onions and stir to make a roux.
- Gradually add chicken broth, stirring constantly until the gravy thickens.
- Return chicken to the skillet, cover, and simmer for 30 minutes until chicken is cooked through.
- Serve the chicken and gravy over the cooked rice.
Notes
For a creamier gravy, add a splash of milk at the end. Pairs well with steamed vegetables.
