Description

A comforting dish featuring tender chicken smothered in a rich gravy, served over fluffy rice.


Ingredients

  • 2 cups long-grain rice
  • 4 boneless chicken thighs
  • 1 large onion, sliced
  • 2 cloves garlic, minced
  • 1 cup chicken broth
  • 1/2 cup all-purpose flour
  • 2 tablespoons olive oil
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 teaspoon paprika

Instructions

  1. Cook rice according to package instructions and set aside.
  2. Season chicken thighs with salt, pepper, and paprika.
  3. In a large skillet, heat olive oil over medium heat and brown the chicken on both sides, about 5 minutes per side.
  4. Remove chicken from skillet and set aside.
  5. In the same skillet, add onion and garlic, sauté until softened.
  6. Sprinkle flour over the onions and stir to make a roux.
  7. Gradually add chicken broth, stirring constantly until the gravy thickens.
  8. Return chicken to the skillet, cover, and simmer for 30 minutes until chicken is cooked through.
  9. Serve the chicken and gravy over the cooked rice.

Notes

For a creamier gravy, add a splash of milk at the end. Pairs well with steamed vegetables.
