Description

Ingredients

  • 2 pounds chicken thighs
  • 1 cup uncooked rice
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 cup chicken broth
  • 1 tablespoon olive oil
  • Salt and pepper to taste

Instructions

  1. Season the chicken with salt and pepper.
  2. Heat olive oil in a skillet over medium heat and brown the chicken.
  3. Add onion and garlic, cook until softened.
  4. Stir in rice and chicken broth, bring to a boil.
  5. Reduce heat, cover, and simmer for 20 minutes until rice is cooked and chicken is tender.

Notes

For a creamier version, add a splash of cream at the end.
