Description

Easy and irresistible smothered burritos featuring honey lime chicken, packed with flavors and simple to prepare.


Ingredients

  • 2 pounds boneless, skinless chicken breasts
  • 1/4 cup honey
  • Juice of 2 limes
  • 2 tablespoons olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon cumin
  • Salt and pepper to taste
  • 6 large flour tortillas
  • 1 cup shredded cheese
  • 1 cup sour cream
  • 1 cup black beans, drained and rinsed
  • 1 cup corn kernels
  • Fresh cilantro for garnish

Instructions

  1. In a bowl, mix honey, lime juice, olive oil, garlic powder, cumin, salt, and pepper to create the marinade.
  2. Add chicken to the marinade and let it sit for at least 30 minutes.
  3. Grill or pan-fry the chicken until fully cooked, then shred it.
  4. Warm the tortillas and fill each with shredded chicken, black beans, corn, and cheese.
  5. Roll the burritos and place them in a baking dish.
  6. Top with additional cheese and bake at 375°F for 15 minutes until golden and bubbly.
  7. Serve hot, garnished with sour cream and cilantro.

Notes

For a spicier version, add chopped jalapeños to the filling. Leftovers can be refrigerated for up to 3 days.
