Easy and irresistible smothered burritos featuring honey lime chicken, packed with flavors and simple to prepare.
Ingredients

- 2 pounds boneless, skinless chicken breasts
- 1/4 cup honey
- Juice of 2 limes
- 2 tablespoons olive oil
- 1 teaspoon garlic powder
- 1 teaspoon cumin
- Salt and pepper to taste
- 6 large flour tortillas
- 1 cup shredded cheese
- 1 cup sour cream
- 1 cup black beans, drained and rinsed
- 1 cup corn kernels
- Fresh cilantro for garnish
Instructions
- In a bowl, mix honey, lime juice, olive oil, garlic powder, cumin, salt, and pepper to create the marinade.
- Add chicken to the marinade and let it sit for at least 30 minutes.
- Grill or pan-fry the chicken until fully cooked, then shred it.
- Warm the tortillas and fill each with shredded chicken, black beans, corn, and cheese.
- Roll the burritos and place them in a baking dish.
- Top with additional cheese and bake at 375°F for 15 minutes until golden and bubbly.
- Serve hot, garnished with sour cream and cilantro.
Notes
For a spicier version, add chopped jalapeños to the filling. Leftovers can be refrigerated for up to 3 days.
