Description

These soft strawberry cheesecake cookies combine the creamy tang of cheesecake with fresh strawberry flavors in a chewy cookie base.


Ingredients

  • 1/2 cup fresh strawberries, chopped
  • 1/4 cup powdered sugar for dusting

Instructions

  1. Preheat your oven to 350ยฐF (175ยฐC) and line a baking sheet with parchment paper.
  2. In a medium bowl, whisk together the flour, baking powder, and salt. Set aside.
  3. In a large bowl, cream together the softened butter and granulated sugar until light and fluffy.
  4. Beat in the egg and vanilla extract until well combined.
  5. Add the cream cheese and mix until smooth.
  6. Gradually stir in the dry ingredients until just combined, then fold in the chopped strawberries.
  7. Drop spoonfuls of dough onto the prepared baking sheet, spacing them about 2 inches apart.
  8. Bake for 12-15 minutes or until the edges are lightly golden.
  9. Allow cookies to cool on the baking sheet for 5 minutes before transferring to a wire rack.
  10. Dust with powdered sugar before serving.

Notes

For best results, use fresh strawberries and chill the dough for 30 minutes before baking to prevent spreading.
