Ingredients

- 2 cups cooked chicken breast, shredded
- 1 cup black beans, drained and rinsed
- 1 cup corn kernels
- 1/2 cup red bell pepper, diced
- 1/4 cup red onion, finely chopped
- 1 avocado, diced
- 1/4 cup fresh cilantro, chopped
- 2 tablespoons lime juice
- 2 tablespoons olive oil
- 1 teaspoon cumin
- 1 teaspoon chili powder
- Salt and pepper to taste
Instructions
- In a large bowl, combine the shredded chicken, black beans, corn, red bell pepper, red onion, avocado, and cilantro.
- In a small bowl, whisk together the lime juice, olive oil, cumin, chili powder, salt, and pepper.
- Pour the dressing over the salad ingredients and toss gently to combine.
- Serve immediately or chill in the refrigerator for 30 minutes to enhance flavors.
Notes
For a spicier version, add diced jalapenos or a dash of hot sauce. This salad can be meal-prepped ahead of time.
