Ingredients

  • 2 cups cooked chicken breast, shredded
  • 1 cup black beans, drained and rinsed
  • 1 cup corn kernels
  • 1/2 cup red bell pepper, diced
  • 1/4 cup red onion, finely chopped
  • 1 avocado, diced
  • 1/4 cup fresh cilantro, chopped
  • 2 tablespoons lime juice
  • 2 tablespoons olive oil
  • 1 teaspoon cumin
  • 1 teaspoon chili powder
  • Salt and pepper to taste

Instructions

  1. In a large bowl, combine the shredded chicken, black beans, corn, red bell pepper, red onion, avocado, and cilantro.
  2. In a small bowl, whisk together the lime juice, olive oil, cumin, chili powder, salt, and pepper.
  3. Pour the dressing over the salad ingredients and toss gently to combine.
  4. Serve immediately or chill in the refrigerator for 30 minutes to enhance flavors.

Notes

For a spicier version, add diced jalapenos or a dash of hot sauce. This salad can be meal-prepped ahead of time.
