Description

A delicious pasta dish featuring spaghetti tossed in a creamy sun-dried tomato sauce with fresh spinach.


Ingredients

Scale
  • 8 ounces spaghetti
  • 2 tablespoons olive oil
  • 3 cloves garlic, minced
  • 1/2 cup sun-dried tomatoes, chopped
  • 1 cup heavy cream
  • 2 cups fresh spinach
  • Salt and pepper to taste
  • Grated Parmesan cheese for serving

Instructions

  1. Cook the spaghetti according to package instructions until al dente; drain and set aside.
  2. In a large skillet, heat olive oil over medium heat. Add minced garlic and sauté until fragrant.
  3. Add chopped sun-dried tomatoes and cook for 2 minutes.
  4. Pour in heavy cream and bring to a simmer. Stir until the sauce thickens slightly.
  5. Add fresh spinach and cook until wilted.
  6. Toss the cooked spaghetti in the sauce, season with salt and pepper.
  7. Serve hot, topped with grated Parmesan cheese.

Notes

For a lighter version, substitute heavy cream with half-and-half or milk.
