Description

A creamy pasta dish combining spaghetti, fresh spinach, and a rich sun-dried tomato cream sauce.


Ingredients

  • 8 ounces spaghetti
  • 2 cups fresh spinach leaves
  • 1/2 cup sun-dried tomatoes, chopped
  • 1 cup heavy cream
  • 2 cloves garlic, minced
  • 1/4 cup grated Parmesan cheese
  • Salt and pepper to taste
  • 2 tablespoons olive oil

Instructions

  1. Bring a large pot of salted water to a boil. Add spaghetti and cook according to package instructions until al dente. Drain and set aside.
  2. In a large skillet, heat olive oil over medium heat. Add minced garlic and sauté for 1 minute until fragrant.
  3. Add chopped sun-dried tomatoes and fresh spinach to the skillet. Cook for 2-3 minutes until the spinach wilts.
  4. Pour in the heavy cream and bring to a simmer. Stir in grated Parmesan cheese and season with salt and pepper.
  5. Add the cooked spaghetti to the sauce and toss to coat evenly.
  6. Serve hot, garnished with additional Parmesan if desired.

Notes

For a lighter version, substitute heavy cream with half-and-half or a dairy-free alternative.
