A creamy pasta dish combining spaghetti, fresh spinach, and a rich sun-dried tomato cream sauce.

- 8 ounces spaghetti
- 2 cups fresh spinach leaves
- 1/2 cup sun-dried tomatoes, chopped
- 1 cup heavy cream
- 2 cloves garlic, minced
- 1/4 cup grated Parmesan cheese
- Salt and pepper to taste
- 2 tablespoons olive oil
Instructions
- Bring a large pot of salted water to a boil. Add spaghetti and cook according to package instructions until al dente. Drain and set aside.
- In a large skillet, heat olive oil over medium heat. Add minced garlic and sauté for 1 minute until fragrant.
- Add chopped sun-dried tomatoes and fresh spinach to the skillet. Cook for 2-3 minutes until the spinach wilts.
- Pour in the heavy cream and bring to a simmer. Stir in grated Parmesan cheese and season with salt and pepper.
- Add the cooked spaghetti to the sauce and toss to coat evenly.
- Serve hot, garnished with additional Parmesan if desired.
Notes
For a lighter version, substitute heavy cream with half-and-half or a dairy-free alternative.
