For the Crust:
- 2 cups all-purpose flour
- 1 1/2 cups granulated sugar
- 1 tsp baking soda
- 1/2 tsp salt
- 2 tsp ground cinnamon
- 1 tsp ground ginger
- 1/2 tsp ground nutmeg
- 1/4 tsp ground cloves
- 1 cup vegetable oil
- 3 large eggs
- 1 cup buttermilk
- 1 tsp vanilla extract
- 1 cup unsalted butter, softened
- 4 cups powdered sugar
- 1/3 cup eggnog
- 1 tsp vanilla extract
- 1/4 tsp ground nutmeg
Instructions
1. Prepare the Crust:
- Preheat oven to 350ยฐF (175ยฐC). Grease and flour two 9-inch round cake pans.
- In a large bowl, whisk together flour, sugar, baking soda, salt, cinnamon, ginger, nutmeg, and cloves.
- Add oil, eggs, buttermilk, and 1 tsp vanilla to the dry ingredients. Beat with a mixer on medium speed until just combined.
- Pour batter evenly into the prepared pans. Bake for 25-30 minutes, or until a toothpick inserted comes out clean. Let cool completely.
- For the buttercream, beat the softened butter until creamy. Gradually add powdered sugar, then eggnog, 1 tsp vanilla, and nutmeg. Beat until light and fluffy.
- Frost the cooled cake layers with the eggnog buttercream.
