For the Crust:
- 12 oz rigatoni pasta
- 2 boneless chicken breasts, cut into strips
- 2 tablespoons Cajun seasoning
- 2 tablespoons olive oil
- 1 cup Velveeta cheese, cubed
- 1 cup heavy cream
- 3 cloves garlic, minced
- Salt and pepper to taste
- Fresh parsley for garnish
Instructions
1. Prepare the Crust:
- Cook rigatoni pasta according to package instructions; drain and set aside.
- In a bowl, toss chicken strips with Cajun seasoning.
- Heat olive oil in a large skillet over medium heat. Add the seasoned chicken and cook until browned and cooked through, about 6-7 minutes.
- In a separate saucepan over medium heat, combine Velveeta cheese and heavy cream. Stir continuously until smooth and creamy. Add minced garlic, salt, and pepper.
- Combine cooked pasta with the chicken in the skillet. Pour the Velveeta garlic cream sauce over the mixture. Toss until well coated.
- Serve hot, garnished with fresh parsley.
