- 2 pounds boneless chicken thighs, cut into bite-sized pieces
- 1/4 cup honey
- 2 tablespoons fresh ginger, grated
- 2 tablespoons soy sauce
- 1 tablespoon sriracha or chili paste
- 2 cloves garlic, minced
- Salt and pepper to taste
- For the Yum Yum Sauce:
- 1/2 cup mayonnaise
- 1 tablespoon ketchup
- 1 tablespoon rice vinegar
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- For the Bowls:
- 4 cups cooked rice
- 2 cups broccoli florets, steamed
- 1 avocado, sliced
- Sesame seeds for garnish
Instructions
- In a bowl, whisk together honey, grated ginger, soy sauce, sriracha, minced garlic, salt, and pepper to make the marinade.
- Add the chicken pieces to the marinade, toss to coat, and let sit for 15 minutes.
- Heat a large skillet over medium-high heat and cook the marinated chicken for 6-8 minutes until browned and cooked through.
- In a separate bowl, mix mayonnaise, ketchup, rice vinegar, garlic powder, and onion powder to make the yum yum sauce.
- Assemble the bowls by layering cooked rice, steamed broccoli, cooked chicken, and sliced avocado.
- Drizzle with yum yum sauce and sprinkle sesame seeds on top before serving.
Notes
For a spicier version, increase the sriracha. Store leftovers in an airtight container for up to 2 days.
