Description

Spicy honey ginger chicken bowls featuring tender chicken glazed in a sweet and spicy sauce, served over rice with a creamy yum yum sauce drizzle.


Ingredients

  • For the Chicken:
  • 2 pounds boneless chicken thighs, cut into bite-sized pieces
  • 1/4 cup honey
  • 2 tablespoons fresh ginger, grated
  • 2 tablespoons soy sauce
  • 1 tablespoon sriracha or chili paste
  • 2 cloves garlic, minced
  • Salt and pepper to taste
  • For the Yum Yum Sauce:
  • 1/2 cup mayonnaise
  • 1 tablespoon ketchup
  • 1 tablespoon rice vinegar
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • For the Bowls:
  • 4 cups cooked rice
  • 2 cups broccoli florets, steamed
  • 1 avocado, sliced
  • Sesame seeds for garnish

Instructions

  1. In a bowl, whisk together honey, grated ginger, soy sauce, sriracha, minced garlic, salt, and pepper to make the marinade.
  2. Add the chicken pieces to the marinade, toss to coat, and let sit for 15 minutes.
  3. Heat a large skillet over medium-high heat and cook the marinated chicken for 6-8 minutes until browned and cooked through.
  4. In a separate bowl, mix mayonnaise, ketchup, rice vinegar, garlic powder, and onion powder to make the yum yum sauce.
  5. Assemble the bowls by layering cooked rice, steamed broccoli, cooked chicken, and sliced avocado.
  6. Drizzle with yum yum sauce and sprinkle sesame seeds on top before serving.

Notes

For a spicier version, increase the sriracha. Store leftovers in an airtight container for up to 2 days.
