Description

A spicy and cheesy chicken bake featuring Monterey Jack cheese and peppers for a flavorful meal.


Ingredients

  • 2 boneless chicken breasts
  • 1 cup shredded Monterey Jack cheese
  • 2 bell peppers, sliced
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 teaspoon chili powder
  • Salt and pepper to taste
  • 1 tablespoon olive oil

Instructions

  1. Preheat oven to 375°F (190°C).
  2. In a large skillet, heat olive oil over medium heat. Add onion, garlic, and bell peppers, and sauté until softened.
  3. Season chicken breasts with chili powder, salt, and pepper.
  4. Place chicken in a baking dish and top with the sautéed vegetables and shredded cheese.
  5. Bake in the preheated oven for 25-30 minutes, or until chicken is cooked through and cheese is melted and bubbly.
  6. Let rest for 5 minutes before serving.

Notes

For a spicier version, add jalapeños or cayenne pepper. Serve with rice or a side salad.
