- 2 boneless chicken breasts
- 1 cup shredded Monterey Jack cheese
- 2 bell peppers, sliced
- 1 onion, chopped
- 2 cloves garlic, minced
- 1 teaspoon chili powder
- Salt and pepper to taste
- 1 tablespoon olive oil
Instructions
- Preheat oven to 375°F (190°C).
- In a large skillet, heat olive oil over medium heat. Add onion, garlic, and bell peppers, and sauté until softened.
- Season chicken breasts with chili powder, salt, and pepper.
- Place chicken in a baking dish and top with the sautéed vegetables and shredded cheese.
- Bake in the preheated oven for 25-30 minutes, or until chicken is cooked through and cheese is melted and bubbly.
- Let rest for 5 minutes before serving.
Notes
For a spicier version, add jalapeños or cayenne pepper. Serve with rice or a side salad.
