Description

Tender meatballs simmered in a spicy Thai coconut curry sauce with aromatic herbs and vegetables.


Ingredients

  • 1 lb ground chicken
  • 2 tablespoons red curry paste
  • 1 can (14 oz) coconut milk
  • 1 onion, finely chopped
  • 2 garlic cloves, minced
  • 1 tablespoon fish sauce
  • 1 teaspoon ginger, grated
  • 1 red bell pepper, sliced
  • Fresh cilantro for garnish
  • Salt to taste

Instructions

  1. In a bowl, mix ground chicken with red curry paste, garlic, ginger, and salt; form into meatballs.
  2. Heat oil in a pan and brown the meatballs on all sides.
  3. Add onion and bell pepper; cook until softened.
  4. Pour in coconut milk and fish sauce; simmer until meatballs are cooked through.
  5. Garnish with cilantro and serve hot.

Notes

For a spicier version, add extra curry paste or fresh chili.
