- 1 lb ground chicken
- 2 tablespoons red curry paste
- 1 can (14 oz) coconut milk
- 1 onion, finely chopped
- 2 garlic cloves, minced
- 1 tablespoon fish sauce
- 1 teaspoon ginger, grated
- 1 red bell pepper, sliced
- Fresh cilantro for garnish
- Salt to taste
Instructions
- In a bowl, mix ground chicken with red curry paste, garlic, ginger, and salt; form into meatballs.
- Heat oil in a pan and brown the meatballs on all sides.
- Add onion and bell pepper; cook until softened.
- Pour in coconut milk and fish sauce; simmer until meatballs are cooked through.
- Garnish with cilantro and serve hot.
Notes
For a spicier version, add extra curry paste or fresh chili.
