- 4 boneless, skinless chicken breasts
- 2 cups fresh spinach, chopped
- 1 cup shredded mozzarella cheese
- 2 cloves garlic, minced
- Salt and pepper to taste
- 1 tablespoon olive oil
Instructions
- Preheat your oven to 375°F (190°C).
- Using a sharp knife, cut a pocket into each chicken breast without cutting all the way through.
- In a bowl, mix the chopped spinach, minced garlic, and shredded mozzarella cheese. Season with salt and pepper.
- Stuff each chicken breast with the spinach mixture and secure with toothpicks if necessary.
- Heat olive oil in a skillet over medium heat. Sear the stuffed chicken breasts for 2-3 minutes on each side until golden.
- Transfer the chicken to a baking dish and bake in the preheated oven for 20-25 minutes, or until the chicken reaches an internal temperature of 165°F (74°C).
- Let rest for 5 minutes before serving.
Notes
For a crispier exterior, broil for the last 2 minutes. Ensure all toothpicks are removed before serving.
