Description

This recipe features tender chicken breasts stuffed with fresh spinach and gooey mozzarella, perfect for a flavorful dinner.


Ingredients

  • 4 boneless, skinless chicken breasts
  • 2 cups fresh spinach, chopped
  • 1 cup shredded mozzarella cheese
  • 2 cloves garlic, minced
  • Salt and pepper to taste
  • 1 tablespoon olive oil

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Using a sharp knife, cut a pocket into each chicken breast without cutting all the way through.
  3. In a bowl, mix the chopped spinach, minced garlic, and shredded mozzarella cheese. Season with salt and pepper.
  4. Stuff each chicken breast with the spinach mixture and secure with toothpicks if necessary.
  5. Heat olive oil in a skillet over medium heat. Sear the stuffed chicken breasts for 2-3 minutes on each side until golden.
  6. Transfer the chicken to a baking dish and bake in the preheated oven for 20-25 minutes, or until the chicken reaches an internal temperature of 165°F (74°C).
  7. Let rest for 5 minutes before serving.

Notes

For a crispier exterior, broil for the last 2 minutes. Ensure all toothpicks are removed before serving.
