Description

A cozy, healthy, and delicious soup made with fresh spinach, white beans, and tender meatballs, perfect for a nutritious meal.


Ingredients

  • 1 lb ground turkey
  • 1 can (15 oz) white beans, drained and rinsed
  • 2 cups fresh spinach, chopped
  • 1 onion, diced
  • 2 garlic cloves, minced
  • 4 cups chicken broth
  • 1 tsp Italian seasoning
  • Salt and pepper to taste
  • 2 tbsp olive oil

Instructions

  1. In a large bowl, mix ground turkey with Italian seasoning, salt, and pepper. Form into meatballs.
  2. Heat olive oil in a pot over medium heat. Add meatballs and cook until browned on all sides.
  3. Add diced onion and minced garlic to the pot and sauté until softened.
  4. Pour in chicken broth and bring to a boil. Add white beans and simmer for 10 minutes.
  5. Stir in chopped spinach and cook until wilted, about 5 minutes. Adjust seasoning as needed.
  6. Serve hot and enjoy.

Notes

For a vegetarian version, substitute ground turkey with plant-based meatballs. Pairs well with crusty bread.
