- 1 lb ground turkey
- 1 can (15 oz) white beans, drained and rinsed
- 2 cups fresh spinach, chopped
- 1 onion, diced
- 2 garlic cloves, minced
- 4 cups chicken broth
- 1 tsp Italian seasoning
- Salt and pepper to taste
- 2 tbsp olive oil
Instructions
- In a large bowl, mix ground turkey with Italian seasoning, salt, and pepper. Form into meatballs.
- Heat olive oil in a pot over medium heat. Add meatballs and cook until browned on all sides.
- Add diced onion and minced garlic to the pot and sauté until softened.
- Pour in chicken broth and bring to a boil. Add white beans and simmer for 10 minutes.
- Stir in chopped spinach and cook until wilted, about 5 minutes. Adjust seasoning as needed.
- Serve hot and enjoy.
Notes
For a vegetarian version, substitute ground turkey with plant-based meatballs. Pairs well with crusty bread.
