For the Crust:
- 1 lb flank steak
- 2 cups cooked rice
- 1 cup black beans
- 1 cup corn kernels
- 1 red bell pepper, chopped
- 1 avocado, sliced
- 1/4 cup fresh cilantro, chopped
- 1 lime, juiced
- 2 tablespoons olive oil
- Salt and pepper to taste
Instructions
1. Prepare the Crust:
- Season the flank steak with salt, pepper, and olive oil. Grill or sear in a pan over medium-high heat for 4-5 minutes on each side or until cooked to your preference.
- Let the steak rest for 5 minutes, then slice thinly against the grain.
- In serving bowls, layer the cooked rice, black beans, corn, bell pepper, and steak slices. Top with avocado slices and fresh cilantro. Squeeze lime juice over the top and serve.
