For the Crust:

  • 8 oz sirloin steak
  • 2 large eggs
  • 1 avocado, sliced
  • Salt and pepper to taste
  • 1 tbsp olive oil
  • 1 cup cooked quinoa
  • Chopped cilantro for garnish

Instructions

1. Prepare the Crust:

  1. Season the steak with salt and pepper. Heat olive oil in a skillet over medium-high heat and cook the steak to your desired doneness. Remove from heat and let it rest.
  2. In the same skillet, fry the eggs until the whites are set but the yolks are still runny.
  3. Slice the steak and arrange it over cooked quinoa in a bowl. Add the eggs and avocado slices, and garnish with cilantro.
