For the Crust:
- 8 oz sirloin steak
- 2 large eggs
- 1 avocado, sliced
- Salt and pepper to taste
- 1 tbsp olive oil
- 1 cup cooked quinoa
- Chopped cilantro for garnish
Instructions
1. Prepare the Crust:
- Season the steak with salt and pepper. Heat olive oil in a skillet over medium-high heat and cook the steak to your desired doneness. Remove from heat and let it rest.
- In the same skillet, fry the eggs until the whites are set but the yolks are still runny.
- Slice the steak and arrange it over cooked quinoa in a bowl. Add the eggs and avocado slices, and garnish with cilantro.
