Ingredients

  • 1 lb flank steak, sliced
  • 2 bell peppers, sliced
  • 1 onion, sliced
  • 2 tomatoes, diced
  • 1/2 cup cilantro, chopped
  • 1 jalapeno, minced
  • 2 cloves garlic, minced
  • 2 tbsp olive oil
  • 1 tsp cumin
  • 1 tsp chili powder
  • Salt and pepper to taste
  • For Pico de Gallo: Combine tomatoes, cilantro, jalapeno, and onion.

Instructions

  1. Marinate the steak with garlic, cumin, chili powder, salt, and pepper for 30 minutes.
  2. Heat olive oil in a skillet over medium heat.
  3. Cook the steak slices for 5-7 minutes until browned.
  4. Add bell peppers and onion to the skillet and cook for another 5 minutes.
  5. Prepare pico de gallo by mixing tomatoes, cilantro, jalapeno, and onion in a bowl.
  6. Assemble bowls with steak, veggies, and pico de gallo.
  7. Serve immediately.

Notes

For a spicier version, add more jalapeno or hot sauce. This recipe pairs well with rice or quinoa.
