Description

A creamy cheesecake layered with fresh strawberries and a buttery crust.


Ingredients

  • 1 1/2 cups graham cracker crumbs
  • 1/4 cup granulated sugar
  • 1/2 cup unsalted butter, melted
  • 4 packages (8 oz each) cream cheese, softened
  • 1 1/4 cups granulated sugar
  • 2 teaspoons vanilla extract
  • 4 large eggs
  • 1 cup sour cream
  • 2 cups fresh strawberries, hulled and sliced
  • 1/2 cup strawberry jam for topping

Instructions

  1. Preheat oven to 325°F (163°C) and grease a 9-inch springform pan.
  2. In a bowl, mix graham cracker crumbs, 1/4 cup sugar, and melted butter; press into the bottom of the pan.
  3. In a large mixing bowl, beat cream cheese and 1 1/4 cups sugar until smooth.
  4. Add vanilla extract and eggs one at a time, beating after each addition.
  5. Stir in sour cream until well combined.
  6. Pour the batter over the crust and bake for 55-60 minutes or until set.
  7. Let cool in the oven with the door slightly open for 1 hour.
  8. Refrigerate for at least 4 hours or overnight.
  9. Before serving, top with sliced strawberries and drizzle with strawberry jam.

Notes

Use fresh, ripe strawberries for the best flavor. Chill thoroughly before serving.
