- 1 1/2 cups graham cracker crumbs
- 1/4 cup granulated sugar
- 1/2 cup unsalted butter, melted
- 4 packages (8 oz each) cream cheese, softened
- 1 1/4 cups granulated sugar
- 2 teaspoons vanilla extract
- 4 large eggs
- 1 cup sour cream
- 2 cups fresh strawberries, hulled and sliced
- 1/2 cup strawberry jam for topping
Instructions
- Preheat oven to 325°F (163°C) and grease a 9-inch springform pan.
- In a bowl, mix graham cracker crumbs, 1/4 cup sugar, and melted butter; press into the bottom of the pan.
- In a large mixing bowl, beat cream cheese and 1 1/4 cups sugar until smooth.
- Add vanilla extract and eggs one at a time, beating after each addition.
- Stir in sour cream until well combined.
- Pour the batter over the crust and bake for 55-60 minutes or until set.
- Let cool in the oven with the door slightly open for 1 hour.
- Refrigerate for at least 4 hours or overnight.
- Before serving, top with sliced strawberries and drizzle with strawberry jam.
Notes
Use fresh, ripe strawberries for the best flavor. Chill thoroughly before serving.
