Description

Delicious cookies filled with fresh strawberries and creamy filling, perfect for a sweet treat.


Ingredients

  • 2 cups all-purpose flour
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1 cup unsalted butter, softened
  • 1 cup granulated sugar
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1 cup fresh strawberries, chopped
  • 1/2 cup heavy cream
  • 1/4 cup powdered sugar

Instructions

  1. Preheat oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. In a medium bowl, whisk together flour, baking powder, and salt.
  3. In a large bowl, cream butter and sugar until light and fluffy. Beat in egg and vanilla.
  4. Gradually add dry ingredients to the wet mixture and mix until combined.
  5. Fold in chopped strawberries.
  6. Drop spoonfuls of dough onto the prepared baking sheet and bake for 12-15 minutes.
  7. While cookies cool, whip heavy cream and powdered sugar until stiff peaks form.
  8. Once cookies are cool, sandwich with whipped cream mixture.

Notes

Store in an airtight container for up to 2 days. For best results, use ripe strawberries.
