- 2 cups all-purpose flour
- 1/2 teaspoon baking powder
- 1/4 teaspoon salt
- 1 cup unsalted butter, softened
- 1 cup granulated sugar
- 1 large egg
- 1 teaspoon vanilla extract
- 1 cup fresh strawberries, chopped
- 1/2 cup heavy cream
- 1/4 cup powdered sugar
Instructions
- Preheat oven to 350°F (175°C) and line a baking sheet with parchment paper.
- In a medium bowl, whisk together flour, baking powder, and salt.
- In a large bowl, cream butter and sugar until light and fluffy. Beat in egg and vanilla.
- Gradually add dry ingredients to the wet mixture and mix until combined.
- Fold in chopped strawberries.
- Drop spoonfuls of dough onto the prepared baking sheet and bake for 12-15 minutes.
- While cookies cool, whip heavy cream and powdered sugar until stiff peaks form.
- Once cookies are cool, sandwich with whipped cream mixture.
Notes
Store in an airtight container for up to 2 days. For best results, use ripe strawberries.
