For the Crust:
- 8 slices thick brioche or challah bread
- 8 oz cream cheese, softened
- 1/4 cup powdered sugar
- 1 tsp vanilla extract
- 1 cup fresh strawberries, diced
- 3 large eggs
- 1/2 cup milk
- 1 tsp ground cinnamon
- 2 tbsp butter
- 2 tbsp maple syrup
- For the sauce: 1 cup sliced strawberries, 2 tbsp sugar, 1/4 cup water
Instructions
1. Prepare the Crust:
- Make the filling: In a bowl, beat the softened cream cheese, powdered sugar, and vanilla until smooth. Gently fold in the diced strawberries.
- Assemble the toast: Spread a generous amount of the cheesecake filling onto 4 slices of bread. Top with the remaining slices to form sandwiches, pressing down gently.
- Make the egg wash: In a shallow dish, whisk together the eggs, milk, and cinnamon until well combined.
- Cook the French toast: Melt butter in a large skillet over medium heat. Dip each stuffed sandwich into the egg wash, coating both sides. Cook for 3-4 minutes per side, until golden brown and cooked through.
- Make the strawberry sauce: While the toast cooks, combine the sliced strawberries, sugar, and water in a small saucepan. Simmer for 5-7 minutes until the strawberries break down and the sauce thickens slightly.
- Serve immediately, drizzled with the warm strawberry sauce and maple syrup.
